On the island of Colonsay there are tales of mischievous spirits. Spirits that have inhabited the rocks and the trees on the inlet for thousands of years. But rest easy, these Scottish spirits are good natured, and are only looking for a good thyme. Wild Time Spirits is the small batch distillery that gets its name and its reputation from these playful imps. On a mission to be even closer to home the distillery announced in April that it was moving its gin production to a new location on the stunning Inner Hebridean island of Colonsay. By the end of May, the distillery will be releasing its first “island batch” of Colonsay Gin.
The husband and wife team behind Wild Thyme Spirits, Fin and Eileen Geekie, have been working passionately with one of Scotland’s smallest distilleries, Strathearn, to craft the best small batch gin, and they decided it was time to bring Colonsay Gin back to the island. Colonsay gin is a true encapsulation of the flavors of the island. This unique gin is juniper led and is made in 100L copper still in small exclusive batches of only 162 bottles.
This spirit is loaded with 7 (that’s right 7) aromatic and flavorful botanicals. These include juniper, angelica root, calamus root, liquorice root, orange peel, orris root, and coriander seeds. Each one is added to their classic recipe and distilled very slowly and then held for an additional 4 or 5 days to mellow the flavors. Ideally served over ice, with premium tonic, and with a garnish of orange zest, or if you’re feeling a little wild, a slice of green chili. Bursting with flavor and mixed with local tradition this hand-crafted gin is sure to become the stuff of legend!
