An aromatic bouquet, with raspberry and plum prominent, subtle background notes of fresh vanilla bean and violets mingle effortlessly; ever so slightly perfumed, intoxicating, a real thought provoker. The palate is expansive and characterful; the initial attack is all red fruit, slightly confected, but not in a cloying way; it yields quickly to tart dark fruits, with liquorice and a dash of white pepper rounding off what is a seemingly everlasting finish.
This truly stunning Spanish beauty really wowed me and the guests I served it too; it’s silky smooth and utterly unctuous, elegant and approachable, so a decant isn’t necessary, but it does open up nicely after a short while; there is no doubt this will age gracefully for a decade or more. Paired beautifully with slow roasted shoulder of lamb and Moroccan tagine. Serve at 18-20’c and enjoy in good company.
