Industry City Distillery, the experimental Brooklyn distillery behind sugar beet-based Industry Standard Vodka began leading tours through its factory at the City Foundry this June. For their Industry Standard Vodka, the distillery uses an immobilized cell bioreactor fermentation system to transform beet sugar into 80-proof vodka made with yeast grown on-site from a strain originally pulled from beet fields in France. It’s also where they batch and bottle their newest experiment: Technical Reserve, which at 191.2 proof (or 96.5% ABV, the physical maximum for natural ethyl alcohol distillation) is America’s strongest spirit. Take a “hard hat”tour, which invites guests into the equipment-development arena and demos the vodkas’ fractional blending process. Then taste the Industry Standard: light florals, a smooth texture, and a finish with notes of spice and vanilla.
