Champagne can be found as an ingredient in cocktails and punches well before the first recipes were ever published. The first cocktail book, released in 1862, recognizes the first Champagne Cocktail but without any spirit added. The first addition of cognac is believed to have come from a winning recipe in a New York cocktail competition in 1889.

Soak a sugar cube in bitters and drop into a Champagne flute. Cover with Courvoisier VS Cognac and slowly top with Champagne. Serve in a Champagne flute |
