Silicon Valley’s Atherton, Selby’s is inspired by Hollywood’s glamourous dining scene of the 1930s and 1940s, and pays homage to dining establishments such as Chasen’s, Romanoff’s and New York’s 21 Club. The restaurant introduces “The Coldest Martini on the West Coast” delivered by way of a signature brass Martini Cart in two variations. By deviating from traditional technique and using only frozen spirits without shaking or stirring, Selby’s martinis are never diluted and always exude class and sophistication in its coldest – and coolest – form.
Selby’s Martini Cart, modeled after a vintage 1930s Parisian bar trolley with glass and mirrored accents, will move throughout the restaurant offering an opportunity to enjoy the “The Coldest Martini on the West Coast.” Guests can choose from a Classic or Vesper martini; both are equally icy and will be prepared tableside. The Classic is made with gin or vodka and dry vermouth, and the Vesper is made with “Three measures of gin, one of vodka, half a measure Littlet Blanc, lemon peel.” – James Bond
The menu at Selby’s offers guests luxurious interpretations of classic dishes with a modern approach to flavor and presentation to pair perfectly with any variety martini. “The Coldest Martini on the West Coast” is just one of the dynamic offerings on Selby’s robust cocktail and spirits program.
