To get into Noble Experiment, you first have to enter another bar, Neighborhood, which is one of the more popular craft beer bars in downtown San Diego’s party-fueled Gaslamp District. Then, you walk towards the bathrooms and push what looks like a solid wall of stacked kegs which instead a trick door that swings open to reveal Noble Experiment, the 45-seat speakeasy bred in the imaginative and classic craft cocktail tradition of New York’s famous Milk & Honey. Seasonally made syrups, fresh farmers market ingredients, and clear, hand-cut ice give all the creative drinks a homemade touch – if you have an expertly trained mixologist in your house.
