It starts with 100% Pinot Noir grapes. Grown in soil that is perfect for sparkling wine and harvested in the early morning hours to keep the cool temperature. Destemmed and then crushed. Housed cold for 30 days in stainless steel tanks with selected yeasts. Then moved to secondary fermentation in small stainless-steel tanks and finished with lees contact for 90 days. The result is a sparkling Pinot Noir that stands out from the rest. The winemakers at Gauchezco Wines located in Mendoza, Argentina love what they do. A family-owned winery, Gauchezco is home to some of the oldest vines in their surrounding area of Maipu and the Uco Valley. These vines are hand selected especially in all of their wines, and their new Extra Brut Pinot Noir is a fine addition to their collection.
