Bye Bye Foie Now… (and foie cocktails)

If you live in San Francisco or LA, you probably know that June 30th was the last day you could legally buy (read: as far as we understand, it’s not illegal to eat it) foie gras in California. Animal rights activists have been picking on foie gras producers for quite some time, and culinary geniuses took advantage to market foie-mageddon (if you want to know more about foie, learn a bit from our friend Anthony HERE). A state-wide ban on the fatted goose liver went into affect as the clock struck midnight. But before hand, revelers and foodies tried to stuff their mouths with any kind of foie they could find. We saw full foie dinners, foie ice cream, and foie pizzas, but here at drink me we opted to say goodbye to the culinary delight with a foie gras cocktail.

We headed to Alexander’s Steakhouse in San Francisco near the Giants Stadium for what would be our first (and probably last) foie gras cocktail. Now we’ve had umami laden meat cocktails, bacon washed bourbon and the suck, but a foie cocktail got our taste buds riled up. Alexander’s is famous for their steaks and amazing cocktails, so we figure that they’d know what they were doing. Casper Rice, the restaurant’s bar manager created a special foie cocktail called “Daffy’s Slur” to commemorate the final days of foie. He infused foie gras into Hangar One vodka, mixed it with Green Chartreuse, home made hazelnut infused Reyka, strawberry balsamic gastrique and fresh thai basil, topped with champagne. What seems like some of the oddest mix of ingredients made an incredible drink that would make Daffy drool. It was a succulent French send off. It had a strong and beautiful flavor from the foie and a balancing acid from the balsamic gastrique. But drool all you want, you’ll have to skip town to get a similar drink (or at least legally… we’ve been told that the SFPD won’t be enforcing the ban). Luckily, Alexanders has a host of other incredible and inventive cocktails to keep your palate dancing for days (and you won’t have PETA outside waving their finger at you).
